5 Minute CRISPY Sweet Potato Chips
I was pretty shocked when I discovered this recipe. It’s UHMAZING.
Total Time: 5 minutes
Ingredients:
- Sweet potato
- Salt (or any other seasoning)
- Olive oil spray can
Instructions:
- Use a mandolin and slice up your sweet potato (try to find one that has an even girth throughout the entire length of the potato so you have evenly sized chips)
- Cut parchment paper the size of your glass plate inside the microwave
- Lay the chips in a single layer on the parchment paper
- Lightly spray with non-stick spray and salt them
- Microwave on 100% power for 2 minutes 30 seconds (Please note: This measurement was for MY microwave, so please be aware of your own) You will know they are done when they start to lightly brown, but do not wait till they entirely brown — that would mean it burnt)
- Let the chips cool, and they will turn crispy :)

Healthy Banana, Almond and Chocolate Ice Cream
Ingredients
- 3 very ripe bananas, peeled, cut into chunks and frozen
- ⅓ cup almond butter (can substitute peanut butter)
- ¼ cup bittersweet or dark chocolate chips
- chopped almond and chocolate for garnish (optional)
Directions
- Place the bananas and almond butter (or peanut butter) into the blender. Begin blending and quickly increase speed to high. Once everything is slightly combined, stop and add the chocolate chips. Turn the machine back on and again increase the speed to high. In about 10-30 seconds, the sound of the motor will change and mounds should appear in the mixture. Stop machine immediately or melting can occur. If using a food processor: In a food processor combine the bananas and almond butter. Process until almost smooth. Add the chocolate chips and process until well combined.
- Scoop into bowls, top with chopped chocolate and almonds, if using, and serve immediately.
Serves two to three.
Note: You can also freeze the mixture to get a harder ice cream, but you may have to let it sit out and thaw for a minute or two before you’ll be able to scoop it.

Nothing says summer like watermelon! Slice watermelon into approx 1 inch rings, then remove the rind from each slice with a small knife. Place one watermelon “round” onto each salad plate, then top with a layer of thinly sliced fresh mozzarella (5 pieces?), followed by a layer of finely chopped mint, basil (approx 1/4 c each) and a sprinkling of nuts (I used almonds and walnuts, but you can use any kind). Drizzle with a bit of olive oil and sea salt before serving. Enjoy with a fork and knife- a light yet filling salad!

Homemade Apple Chips
(makes about 25 chips)
Ingredients
- 1 large Granny Smith apple
- 2 tbsp light brown sugar
- 1 tbsp cinnamon
Instructions
- Mix the sugar and cinnamon together in a wide, shallow dish.
- Slice apples as thinly as possible on a mandoline and dip individually in the sugar mixture.
- Lay slices on baking pans lined with parchment paper. Bake at 225 for one hour.
- Flip the apple slices and rotate the pans in the oven and bake for another hour.

What is overnight oats?
Overnight oats (OO) is basically oats soaked in the liquid of your choice. Either milk or yogurt, but you can always experiment with other kinds. It is often chilled overnight (hence the name) and usually left uncooked. However you can heat it up if you prefer to. It is perfect for days when you are in a rush to make breakfast, just make it in a jar the day before and it’s ready to go the next day.
You can add any kinds of toppings you want to it. You can add fresh fruits, nuts, dried fruits, peanut butter, etc. Many people also add chia seeds to the overnight oats. Be adventurous and try new additions, you might be pleasantly surprised!
This is also good to put together with your kids, let them play around with their favorite toppings and learn more about fruits and nuts, etc. There’s no or minimal cooking involved, so it’s safe for them as well.
In the following list, there are several sites that provide the recipes for a basic overnight oatmeal, and if can continue from there if you want to create your own personal one-of-a-kind oatmeal. Have fun! Remember, healthy doesn’t mean boring or tasteless!

College Snacking 101
These are all my go to snacks during the semester. Of course these are also great for at home, at work, or any other time, they’re mostly things that have helped me for the different situations that pop up while at college. There’s plenty more and you can find out what your University offers but these are all things easy to keep around in your dorm room to grab and go with!
